Skinny & Spicy Mango Chicken

As summer approaches, the sweaters come off and the bathing suits come out. Warm weather also means getting together with fam and friends to enjoy the backyard parties and BBQ’s. Although grilled poultry or meat sounds healthy, sometimes the sauce we pile on racks up the cals and fat tremendously. Here’s a guilt-free marinade that will stimulate your sweet and spicy taste buds this summer.

Ingredients
2 mangos peeled, seeded and pureed
4 tablespoons apple cider vinegar
½ teaspoon sea salt
2 teaspoons or more fresh lime juice
2 to 4 teaspoons fresh ginger
¼ to ½ teaspoon dried, crushed red pepper flakes
¼ to ½ teaspoon of cayenne pepper

 

Recipe
Mango Puree: In a blender or the bowl of a food processor, puree the mango, vinegar, salt and lime juice until smooth. Add the ginger and pepper flakes in small amounts, until the sauce is as hot as you desire. The spice in the sauce will be amplified the longer it sits, if you make it early, use less red pepper flakes and add more if necessary before using.
Chicken Breast: marinate the chicken for 30 minutes, or up to 24 hours for best results. Lightly oil your BBQ or griller before placing the marinated breasts and grill until golden-brown. Use left over sauce for dipping, or heat and pour over cooked breasts. Serve with your favorite salad or side & enjoy!
